Ingredients
- 6 oz lean ground beef (96% lean)
- 6oz extra lean ground turkey breast
- 2 carrots (peeled and shredded)
- 2 celery ribs (chunky slices)
- 1 C chopped onion
- 2 tsp minced garlic
- 6 C beef broth (reduced sodium)
- 2 cans (14.5 oz each) diced tomatoes (undrained)
- 1 tsp dried sage (crushed)
- 1 tsp dried thyme (crushed)
- ½ tsp dried rosemary (crushed)
- ¼ tsp salt
- ¼ tsp ground black pepper
- 2 C potatoes (large chunks)
- 1 tsp smoked paprika
Instructions
- Add ground beef, ground turkey breast, onion, carrots, celery, and garlic to a Dutch oven.
- Continue to cook until the meat is browned and the onions are tender.
- Drain the fat from the meat before adding more ingredients.
- Add in the broth, undrained tomatoes, and all of the seasonings to the Dutch oven.
- Stir to blend. Bring to a boil, add the potato chunks and reduce to a simmer.
- Mix well. Continue to simmer for at least 20 minutes. Check the potato chunks to make sure that they are tender. If not, continue to simmer.
- If tender, serve in bowls garnishing with fresh sage. (If desired) Makes 12-1 cup servings.
