Ingredients

  • Fillings:
  • 2 tablespoons avocado oil

  • ½ lb. lean ground beef (85/15)

  • 1 small onion, finely chopped (4 oz)

  • 1 teaspoon fresh garlic, minced

  • ½ teaspoon salt

  • ½ teaspoon ground cumin

  • ¼ teaspoon black pepper

  • ½ teaspoon smoked paprika

  • Dough:
  • 1 ½ cups shredded part-skim mozzarella cheese (6 oz)

  • 1 oz cream cheese, cubed

  • ¾ cup blanched, finely ground almond flour (3 oz)

  • 1 large egg

Directions

  • Preheat the oven to 350°F and line a rimmed baking sheet with parchment paper.
  • In a large skillet, heat the avocado oil over medium-high heat. Add the ground beef and onion, cooking until the beef is no longer red, approximately 4 minutes. Drain any excess grease.
  • Return the beef mixture to the skillet and add the garlic, salt, pepper, cumin, and smoked paprika. Cook for an additional minute, then remove from heat and set aside.
  • To make the dough, microwave the mozzarella and cream cheese in a microwave-safe bowl for 1 minute, stirring halfway through. Mix in the almond flour and egg until a smooth dough forms.
  • Roll the dough between two sheets of parchment paper to ⅛-inch thickness. Cut out circles using a cookie cutter or glass, rerolling scraps as needed.
  • Spoon a heaping tablespoon of the beef mixture onto one half of each dough circle. Fold the dough over to create a half-circle, pinching the edges closed.
  • Bake the empanadas for 10 minutes, then carefully flip them and bake for an additional 8-10 minutes until golden brown.
  • Allow the empanadas to cool for 10 minutes before serving.
