  • 2 pounds grass-fed ground beef

  • 1 cup chopped onion

  • 1 tablespoon olive oil or avocado oil (only if using lean ground beef)

  • ½ teaspoon salt

  • ¼ teaspoon pepper

  • 4 large eggs

  • 1.5 cups heavy cream

  • 1 teaspoon baking powder

  • 1.5 cups shredded cheddar cheese

  • Optional toppings: crispy bacon, pickles, tomato


  • Preheat your oven to 350 degrees F.
  • In a large cast iron skillet, cook the ground beef and onion (and oil if using lean beef) over medium-high heat until the beef is browned and the onions are tender. Season with salt and pepper.
