Zuppa Toscana soup

My mom made Zuppa Toscana soup..the copy cat from Olive garden, he replaced the potatoes with califlower… omgosh, absolutely delicious!! Here’s the recipe…we doubled it cause we made a huge pot!!

INGREDIENTS:

  • 1lb of Italian sausage
  • 8 slices of bacon
  • ½ large onion diced
  • 2-3 cloves of garlic minced
  • 28 oz low-sodium chicken broth
  • 3 cups water
  • 1 large head of califlower(replaces 5 large potatoes)
  • 1 tsp crushed red pepper flakes optional
  • Salt and pepper optional
  • 4 cups chopped kale
  • 1 cup heavy whipping creamDIRECTION Parmesan cheese:

    You need to add the cream at the very end!!! Cook sausage first ….and sauteed onion and bacon in the pot before you do anything else.. it doesn’t take as long for the kale to cook as it does the cauliflower, so once the cauliflower is just about done throw in the kale!! We chopped up some green onions and put the parmesan cheese on top of the soup per bowl!!! You can’t go wrong with this soup, it’s so warm and yummy when it’s freezing outside.
