Ingredients Needed:

For these Summertime Bliss Lemon Cookies, you’ll need the following ingredients:

Cream cheese (full fat)

Unsalted butter (room temperature)

Powdered sweetener (such as erythritol, monk fruit sweetener blends, Swerve, Bocha Sweet, xylitol, or allulose)

Medium-sized egg

Almond flour (ground almonds)

Fresh lemon (for juice and zest)

How to Make:

Step 1: Cream the Ingredients

In a mixing bowl, combine the cream cheese, room temperature butter, powdered sweetener, and freshly grated lemon zest. Use a food processor or electric mixer to blend the ingredients until smooth and creamy.

Step 2: Add the Egg

Once the mixture is smooth, add the medium-sized egg and continue to blend until well combined. The batter will be quite liquid at this stage, which is perfectly normal.

Step 3: Incorporate the Almond Flour

Gradually add the almond flour to the batter, mixing until a smooth dough forms. The dough may be soft at this stage, so it’s best to chill it in the fridge or freezer to make it easier to handle.

Step 4: Form the Cookies

Using your hands or a cookie scoop, form the chilled dough into balls and place them on a baking sheet lined with parchment paper. Flatten each ball slightly to form thick discs.

Step 5: Bake to Perfection

Bake the cookies in a preheated oven until they are firm on top and lightly browned at the bottom. This typically takes about 15 minutes, but be sure to keep an eye on them to prevent over-browning.

Step 6: Glaze and Enjoy

While the cookies cool, prepare the lemon glaze by combining lemon juice with powdered sweetener. Drizzle the glaze over the cooled cookies and sprinkle with additional lemon zest for an extra burst of flavor.
