Simple and Delicious Mozzarella Bites:

Ingredients

  • 3 cups part-skim low moisture shredded mozzarella cheese
    2 oz cream cheese
3 large eggs (one reserved for egg wash)
    2 cups superfine almond flour
    1 tbsp baking powder
    1 tbsp coarse salt

Directions

  • Preheat your oven to 400°F and line a baking sheet with parchment paper or a silicone baking mat.
  • In a small bowl, whisk together the almond flour and baking powder. Set aside.
  • In a large microwave-safe bowl, combine the mozzarella and cream cheese. Microwave in 30-second intervals until fully melted and blended, stirring between intervals.
  • Once melted, transfer the cheese mixture to a food processor fitted with a dough blade. Add 2 eggs and the almond flour mixture, then pulse until a uniform dough forms.
  • Wrap a pastry board with plastic wrap to prevent sticking. Lightly oil your hands and divide the dough into 8 equal parts. Roll each portion into ropes approximately 1 inch thick.
  • Using a sharp knife, slice the dough into 3/4-inch-wide pieces, yielding approximately 74 bites. Place the bites onto the prepared baking sheet.
  • In a bowl, whisk the remaining egg. Brush the surface of the pretzel bites with the egg wash, then sprinkle with coarse salt.
  • Bake the pretzel bites in the preheated oven for about 12 minutes, or until they turn a light golden brown. For a crispier exterior, broil on low for an additional 2 minutes, monitoring closely to prevent burning.
  • Once baked to perfection, remove from the oven and enjoy warm or at room temperature.
