Ingredients:

For the Burritos:

  • 1 pound ground beef or turkey
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 packet taco seasoning mix
  • 1 can (15 ounces) refried beans
  • 1 can (4 ounces) chopped green chilies (optional)
  • 1 cup cooked rice (optional)
  • 4 large flour tortillas
  • 1 cup shredded cheese (cheddar, Monterey Jack, or a blend)

For the Sauce:

  • 2 tablespoons olive oil
  • 2 tablespoons all-purpose flour
  • 2 cups beef or chicken broth
  • 1 can (15 ounces) tomato sauce
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • Salt and black pepper to taste

Optional Toppings:

  • Chopped fresh cilantro
  • Diced tomatoes
  • Sliced jalapeños
  • Sour cream
  • Avocado slices
  • Salsa

Instructions:

For the Burritos:

  1. In a large skillet, cook the ground beef or turkey over medium heat until browned. Add chopped onion and garlic and cook until the onion is translucent.
  2. Stir in the taco seasoning mix, refried beans, and optional chopped green chilies and cooked rice. Cook for a few minutes until heated through.
  3. Warm the flour tortillas in the microwave or on the stovetop to make them pliable.
  4. Divide the filling evenly among the tortillas and roll them up, folding in the sides as you go.
  5. Place the filled burritos seam-side down in a baking dish.

For the Sauce:

  1. In a medium saucepan, heat the olive oil over medium heat. Add the flour and whisk constantly for 1-2 minutes to create a roux.
  2. Gradually whisk in the broth, tomato sauce, chili powder, cumin, salt, and black pepper. Bring to a simmer and cook for 5-7 minutes, stirring frequently, until the sauce has thickened.

To Assemble and Bake:

  1. Preheat your oven to 350°F (175°C).
  2. Pour the sauce over the burritos, making sure they are evenly covered.
  3. Sprinkle the shredded cheese on top of the sauce.
  4. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and the burritos are heated through.

To Serve:

  1. Garnish the wet burritos with optional toppings like cilantro, diced tomatoes, jalapeños, sour cream, avocado slices, and salsa.
